Hash is a culinary dish consisting of chopped up meat, potatoes, and onions fried in a cast iron skillet. The name is derived from French: hacher, meaning “to chop”. It originated as a way to use up leftovers. By the 1860s in the United States, the reputation of hash as “humble fare” became associated with cheap restaurants, which were known as “hash house” or “hashery”.

Canned corned beef hash became especially popular in countries such as Britain, France, and the United States, during and after the Second World War as rationing limited the availability of fresh meat. Hash can be made with any leftover meat, but corned beef hash is the most popular, followed by roast beef hash.

Hash may be served for breakfast, lunch, or dinner. When served for breakfast in the United States it may come with runny eggs, toast, hollandaise sauce, or even baked beans. In the American South, hash is made with sometimes served with biscuits.[clarification needed] Canadians also enjoy hash for breakfast.
