Random information on the term “Spice mixture”:

Adobo or Adobar (Spanish: marinade, sauce, or seasoning) is the immersion of raw food in a stock (or sauce) composed variously of paprika, oregano, salt, garlic, and vinegar to preserve and enhance its flavor. The Portuguese variant is known as Carne de vinha d’alhos.

The practice is native to Iberia, namely Spanish cuisine and Portuguese cuisine. It was widely adopted in Latin America and other Spanish and Portuguese colonies, including the Azores and Madeira. In the Philippines, the name adobo was given by the Spanish colonists to an indigenous cooking method that also uses vinegar, which, although superficially similar, had developed independently of Spanish influence.

In the years following the discovery of the Americas, meat and fish started to be preserved by new methods. A low temperature facilitated the preservation of food, but the weather often did not provide low temperatures ideal for preservation, so it was necessary to apply other techniques, such as adobo. Animals were usually slaughtered in the coldest months of winter, but surplus meat had to be preserved in the warmer months. This was facilitated through the use of adobos (marinades) along with paprika (a substance with antibacterial properties). Paprika gives a reddish color to adobos and at the same time the capsaicins in paprika permit fats to dissolve to the point of allowing tissue penetration, going deeper than the surface.

The Ruhr-University Bochum (German: Ruhr-Universität Bochum, RUB), located on the southern hills of central Ruhr area in Bochum, was founded in 1962 as the first new public university in Germany after World War II. Instruction began in 1965.

The Ruhr-University Bochum is one of the largest universities in Germany and part of the Deutsche Forschungsgemeinschaft, the most important German research funding organization.

The RUB was very successful in the Excellence Initiative of the German Federal and State Governments (2007), a competition between Germany’s most prestigious universities. It was one of the few institutions left competing for the title of an “elite university”, but did not succeed in the last round of the competition. There are currently nine universities in Germany that hold this title.

The University of Bochum was one of the first universities in Germany to introduce international bachelor’s and master’s degrees, which replaced the traditional German Diplom and Magister. Except for a few special cases (for example in Law) these degrees are offered by all faculties of the Ruhr-University. Currently, the university offers a total of 184 different study programs from all academic fields represented at the university.
